Catch that recent outbreak of hepatitis A here in Los Angeles? The recent studio catering food service outbreak was traced to dirty "organic" salad greens. Is it so bad to require that food handlers have clean hands, use gloves and have access to hot and cold running water? If your gonna sell a ton of barbeque out of a mega bbq pit trailer, you owe your customers safe handling and I'm betting that the Santa Maria Valley Christian Acadamy pit trailer arrives self-contained, with hot and cold running water, waste water holding tank, food handler gloves and, best of all, a great plate of 'que, all people pleasing even permit pleasing, as well.
