Beef brisket Down Under

There is a food blog in Australia, Foodologist, that is run by a Doctor that studies food. He has an scientific approach to all of his posts and cooking. Recently he has BBQ’d up some beef brisket and has documented it with some great photography.

    Nice lookin brisket but it didn’t have a smoke ring. Must be because the smoke swirls in the opposite direction in Austrailia.
