This year the 4th falls on a Wednesday, which sucks because I only get one day off for the holiday. I like having an extra day before to prepare and start to cook my BBQ. Our menu will usually consist of BBQ pulled pork sandwiches for lunch. These are great because I cook the pork overnight in my smoker and they are ready to eat as people arrive. The ribs I like to do the day of so that guests can enjoy them with the rest of the meal.
This year things are a little different and I had to pre-cook all of my meat. This is a pain because I like cooking on that day, but BBQ takes time and this year I have none. It also means that I am going to have to reheat all of my meat, hopefully it wont be overcooked.
I would like to hear about what is on your menu for the Fourth, post a comment and let me know.

Sorry. Commented in wrong section!
I did my July 4th cooking over the weekend. Sat grilled a nice big 3 inch bone in rib eye and chicken wings. Sun smoked some nice baby backs for 7 hours…. YUM!
Maybe I’ll do a beer can chicken and corn on the cob on the 4th though!

nothing like a little rib eye and chicken wings. my brother n law usually handles the beer can chicken and the tri-tip on the fourth.

I can’t wait to see the results on your flickr page. I loved the view of the butt and the ribs.

I like to make ribs but when I am making them at someone else’s house or don’t have time to cook on the event day, I par-bake them. So I give 2-3 hours in the oven at home, and then when I get over to my mom-in-laws I put em on the grill with a smoke box for an hour. A tad drier than one straight cooking shot, but a great compromise between everyone getting mad it took so long (and getting up and over there early) and just having burgers and hotdogs.

I love your website.
Great job on the site! I just came across this site while searching Technorati. Looks like you’re doing everything right to get indexed quickly in the search engines.
Have you ever used a grilling tray to make
grilled jalapeno peppers?
If so, do you have any recipes that you could recommend?
I know my website visitors will definitely love your site so I’ll be sure to link to you as soon as I have my blog up and running.
Keep up the great work!
