I am thrilled to be the first official guest writer on BBQ Junkie. In honor of my first posting, I want to share one of my favorite BBQ recipes.
If you’re looking for a unique way to use your grill this holiday weekend, try Grilled Pizza. It’s easy and extra scrumptious. You’ll forget that there’s any other way to make pizza. The final product tastes like an authentic brick oven pizza. It’s so delicious you’ll think you’re back in that romantic little trattoria in Tuscany.
Grilled Pizza
Ingredients:
Pizza dough and stretched and shaped into a roundish shape – I like the trader Joe’s pre-made dough. It’s not too shabby and inexpensive.
Pizza sauce
Cheese – I like the Trader Joe’s Quattro Formaggio. It’s a perfect blend of Italian cheeses.
Toppings – Add whatever you want, I put some tasty combination ideas below.
Directions:
1. Pre-heat your grill, then clean it well. Oil the grill with Olive oil. (I wipe down the grill using a wadded up paper towel saturated with Olive Oil)
2. If you’re using a gas grill, once it’s hot, turn the flame down to low. With a charcoal grill, spread your charcoal out thinly to cool things down
3. Lightly oil the top side of the dough
4. Place dough, oiled side down, on grill. Cover. Cook until top of dough is raised and puffed and bottom is just crisp, about 3 minutes
5. Lightly oil the dough so it doesn’t stick when you flip it over
6. Using tongs, flip the dough over so the crisped side is up
7. Quickly add your pizza sauce, cheese (not too much or it won’t melt) and toppings
8. Cover
9. Grill until cheese is melted and dough is browned and cooked through, about 3 minutes. Check the underside often to see that it is not burning
10. Remove and serve
Delicious topping combinations:
• Fresh mozzarella, basil, sun-dried tomato and fresh tomato
• Roasted Veggies – eggplant, artichoke hearts, fennel, bell peppers, portabella mushrooms, red onions
• Pesto, portabello mushrooms, pine nuts and fontina
• Prosciutto, goat cheese, plum, and arugula (daddy’s fave!)

Pizza dough rising on the grill.

Finished grilled pizza.

What a quick and easy treat for backyard meals. Using the Trader Joe’s already prepared products is such a convenience.

So, I made a BBQ Pizza this weekend.
The GOOD news: for one of the pizza’s I mixed one-part BBQ Sauce with one-part Tomtato (w/ Galic) sauce and a few drops of Chipotle Tobasco sauce (for good measure). Two words: Taste-T.
The BAD news: I have a gas BBQ. I recommend cooking meat or some other toppings on your pizza if you have gas BBQ. Nothing created smoke, my pizza needed smoke.

If you need smoke, try wrapping a good-sized handful of your favorite wood chips in heavy-duty aluminum foil so that it forms a packet. Poke some holes in the packet and place on your grill over the heat. This should provide some good smoke flavor for you.

You can get a smoke box from BBQ Galore to Wal Mart. A smoke box is a heavy cast iron box with holes on the top. Put in your wood chips, place over a burner and you go smoke flavor.

I’m always looking for new and creative ways to use my BBQ, but never thought of this. What a fabulous idea. You should submit this to a recipe contest, like in Women’s Day Magazine. I do it all the time, but never have won.
This is going to be a great summer thanks to you BBQ junkie and Jill of the Grill. Pizza Pizza, (LOL)
p.s. Is Jill hot? She sounds it. Post pictures of her in a bikini if you have some.

I tried the recipe for grilled pizza and was amazed- it was great. We did this for a couple of friends who dropped by. I had originally planned to cook this just for G and I. The prep was easy (I used Trade Joe’s prepared dough and the pre-shredded mozzarella cheese). I also added pepperoni and sliced tomato with basil. Company was impressed especially with the dough rise. It was quick and ready to eat in under 10-12 minutes. I think my coals were a little too hot on one side, but it was still tasty.

Do you guys know what temp you are cooking at? Are you using direct heat? Has anyone tried this in a smoker with indirect heat? This sounds really good. I look forward to trying it.

I don’t have a trader Joe’s in my area, any alternative’s for the crust & cheese ?

I use medium direct heat over charcoal and thin crust. Then I cook my pizza on a cedar plank. Not only will it keep the crust from burning it gives your pizza a nice light smoke cedar flavor.

this turned out to be very tasty! The only thing we had an issue with is getting the dough onto the grill. It kinda didn’t transfer correctly the first time. We ended up replacing the homemade dough (because we were hungry) with Pillsbury pizza dough. 2 cans of it made enough for 4 people to eat. With this we had to cook the dough a little longer, like 8 minutes each side.
The other thing I would do next time is put my veggies in a wok on the grill a little ahead of time. I like my veggies to get a little burn/crispy on pizza.

I love Pizze!
5. July 2007 at 3:39 pm
We used the Trader Joe’s whole wheat pizza crust (my wife is whole wheat crazy en la cabeza) and it turned out well, but we had to cook it much longer than 3 minutes per side (more like 10) on a Weber gas grill.
Great recipe. I can’t wait to use NORMAL crust sometime when my wife ain’t lookin’.

I had serious issues with burning the crust while not getting enough heat on the top. I put a pizza stone on the rack and preheat the whole thing till 450+. After 8 to 10 minutes on the stone the pizza is cooked top and bottom.. No flipping. No charred crust.

Recipe for the best pizza:
1 boboli premade crust (no longer available ca. 1990)
1 bottle Hunt’s Catsup
12 slices American Cheeze
15 slices (thick cut) baloney
Spread catsup on Boboli
Layer baloney onto catsup
layer cheeze slices over baloney
microwave (high) for 5 minutes, or until cheeze is a gooey orange mess with oil floating on top and baloney smells like hot dogs
Go outside and light BBQ
Sear steak on BBQ, 4 minutes per side.
Throw pizza in trash (or feed to your fat stupid children)
Eat steak
YUMM-O!!!!

So, I tried 4Nic8′s recipe. I think she must have been joking because it was so not awesome, it was soooo awful. To try to improve it, I used Heinz ketchup and thin slices of olive loaf, and microwaved it on medium for 5 minutes. It was much better. Thanks for the recipe!
