What the hell is a tri tip?

Sure, California isn’t on the national barbecue map but maybe it is because that’s the way we like it. Texas seems to have the market on beef while Kansas City and Memphis battle it out with pork. We in California lay ownership to one piece of meat that is truly our own, the “tri tip.” Unfortunately for the rest of the country, tri tip isn’t made readily available outside of California.
